Tartar Sauce with Homemade Dill Pickle

Makes 1 1/2 cups (375 ml)

You haven’t tasted tartar sauce until you’ve tried homemade tartar sauce. The secret to a stellar tartar sauce is to use homemade dill pickles. The pickles, and the brine, made with mulled seasonings, is remarkably better tasting than a store-bought pickle.

1 cup (250 ml) mayonnaise

1/3 (80 ml) cup finely chopped dill pickle

1-2 cloves Ontario garlic, minced

1 Tbsp capers

1 Tbs (5 ml) dill pickle juice

1 tsp (5 ml) lemon juice

1 tsp (5 ml) paprika

Combine ingredients in a bowl.

Add sea salt and fresh ground black pepper to taste.

Refrigerate, covered, until use.
