Watermelon, Mint, Feta Cheese & Garlic Salad
- 15 ml Lemon juice fresh
- 30 ml Vegetable oil
- 2.5 ml Salt
- 2.5 ml Black pepper fresh ground
- 1250 ml Watermelon cut into 1/2' pieces
- 375 ml feta cheese crumbled
- 45 ml Mint leaves coarsely chopped
- In a small bowl whisk the dressing ingredients, and set aside.
- Place salad ingredients in a large bowl, add dressing, and toss gently until all ingredients are mixed.
- Refrigerate until ready to serve. Serve same day.
