Hardneck garlic plants produce a scape with bulbils. Farmers break off the scape to encourage stronger bulbs. The scape has a texture like asparagus and has a strong garlic taste. They’re delicious in soups, sauces and salads. They’re also delicious grilled or, as a garnish in a Caesar. Every part of the scape is edible and tastes like garlic. The restaurants and caterers below are using scapes in their menu for a limited time, starting June 24, 2019 and for as long as they’re available from local farmers.
