Halibut & Pickled Garlic Scape Spread
- 250 ml Cooked halibut
- ¼ Juice of fresh lemon
- 60 ml Pickled garlic scapes chopped fine, may use fresh garlic scapes
- 45 ml Mayonnaise
- Salt and black pepper to taste
- Using a fork mash ingredients together in a bowl.
- Spread on bread and garnish liberally with chopped salad greens.
Use either fresh or pickled garlic scapes, or a combination. If using mainly fresh scapes the recipe will lack an essential tart flavour. It's therfore recommended to add 30 ml (2 Tbsp) finely chopped dill pickle.
