Speakers’ Corner: “Cooking with Heat” – Chef Rosemary Lee (12:00 to 12:25pm)

Rosemary is executive chef/manager at Elte Cafe in the design district of Toronto. She has been in the hospitality business for many years. She studied and taught Thai, Vietnamese and Korean cuisine at George Brown College. She also consults in the food and beverage industry. She worked for the Cordon Bleu Cooking School in Paris, France, as well as in Germany, Thailand and Australia. Before coming back to Toronto she worked in Hong Kong where she was a partner in 7 restaurants which included a Thai, Modern Spanish, Noodle Box, Café Deli and Patisserie, a bar and a seaside restaurant. Rosemary is fluent in English, French and Cantonese and has traveled to over 30 countries. At the 2016 Toronto Garlic Festival Chef Lee will provide a guide on when, how and how much chili pepper to add to a dish to achieve desired taste intensity. Also, tips on cooking at correct temperature to avoid burning garlic, peppers and other spices. She’ll also provide a brief history of peppers and the Scoville scale.
